the aftermath*

it was widow's night again, so the boys got to have their cousins over last night to play while the mommies got to eat and visit sans husbands**. as displayed [left], it was chaotic as always. especially bath time. 6 children, 3 mommies, 2 showers and 1 bathtub, all at once. talk about a 3 ring circus. i volunteered to play hostess and made the most fantastic chicken taco salads for dinner [if i don't say so myself]. perfect for a warm night, perfectly un-time consuming, perfectly "tasty", and approx. only 7 pts. [for any other weight watcher participants out there]. so share the wealth you say? alrighty.

faith's fantastic shredded chicken taco salads

shredded chicken:
chicken breasts - approx. 5 breasts per jar of sauce
salsa or chile sauce [i use 505 organic green chile sauce]

just throw it all together into the crockpot and let cook on high about 4 hrs. or until chicken pulls apart easily. [this chicken is also terrific for burritos!]

ingredients:
romaine lettuce
green onions
baby carrots [cut into matchstick pieces]
cherry tomatoes
sweet peppers [red, yellow, and/or green]
black beans [canned]
whole kernel sweet corn [canned]
avocado [sliced or diced]
shredded cheese
tortilla chips - broken up and sprinkled on top
salsa
sour cream
tortilla bowls [optional]

all the ingredient portions are to taste, start with a bed of lettuce and just pile them on as you like it then top with shredded chicken and dressing. for the dressing i just use salsa and sour cream. you can mix them together or put them on separately, or just use salsa for a more low-cal option.

Perfect--I actually am slated to make a taco salad for Sunday dinner with the extended fam. I am going to use yours, it sounds delish!

Is that playroom supposed to look messy?!?! (wah hah)

Sounds like a great time was had by all in their own way. What more could you ask for? Being together is what counts most. Nice to have tasty Spanish food to top it off with. I like your music, especially "Hey Good Lookin" I got my days exercise dancing to it just before retiring for the night . Played it 3 times. Try it, you'll like it too.
