my family has always been big fans of chili, especially during the "chilly" season [pun intended]. not that we have one here, but starting around halloween and through christmas we like us some warm beans. i decided to get a jump start this year with a new recipe using ground turkey and 3 different kinds of beans. oh and this meal is cheap! even better, warm chili during a [coming?] recession. my mom used to make a big pot of pinto beans that we would eat either as a soup or wrap them up in a tortilla and then add the meat and veggies the next night for chili. that's economic and easy. even as kids we loved it. i'll find out tonight if it will work for the next generation as well."CHILLY"
1 lb. dry pinto beans
soak in water overnight. drain and put in crock pot covered with at least an inch of water. cook on low until tender [4-6 hours].
1 lb. ground turkey
1 onion chopped
2 cloved of garlic crushed
brown together
1 can [16 oz] stewed tomatoes
2 stalks celery
2-3 Tbs. chili powder
2 tsp. salt
1 tsp. sugar
1 tsp. worchestershire sauce
1/2 tsp. crushed red pepper
simmer for an hour then mix into beans in the crock pot. i added a can of black beans and kidney beans then continued to cook on low for another hour or so. whatever suits you.
