101

well, it has happend. we've broken the 100 degree mark. it's currently 101 F outside and i am inside in front of my computer attempting to hide from it. the boys are outside in the pool, but i am sulking. i still want to bake muffins* and not have to crank the A/C. i want to take evening walks around the block with the radio flyer. i want to have picnics in the cool grass and nap under the elm tree. is this too much to ask for? if you live in the phoenix metropolitan area, then yes, yes it is. farewell spring, [my silver lining to this hellish desert i live in] until next year. *sniffle*

*i made some fabulous whole wheat blueberry muffins this morning. which were great until i ate like 4 [six] of them and ended up sweating and sick to my stomach. yeah, i know this might be a major contributing factor to my current bad attitude.

by request:

WHOLE WHEAT BLUEBERRY MUFFINS
---------------------------------------------------
3 C whole wheat flour
1 C sugar
1 tsp salt
4 tsp baking powder
2 eggs - slightly beaten
1/2 C oil
1 C milk [i used soy]
4 oz. fresh blueberries [i put chocolate chips in 1/2 for the boys]
a little honey & butter slathered over the finished product doesn't hurt a bit either.

mix together flour, sugar, salt, and baking powder. add slightly beaten egg, oil, and milk. stir in blueberries. dough should be thick. fill muffins cups 3/4 full. bake at 400 degrees for 20 minutes.

silver lining - steve poltz

:( I'm with ya, Faith. *sigh* At least I can say I took full advantage of AZ's beautiful spring this year ... and I will be "lamenting it's loss for quite a while/stubbornly trying to pretend that it's still possible to have that picnic lunch".

After the mourning is over, we'll come to grips with the "joys" of summer once more ;) ;)

come on up, faith! I'm sure we could find you a place right nestled in the Rockies with cool mountain air blowing though your kitchen to cool down the muffins!
